1 cup of spinach leaves
1/2 cup of water
1/4 cup of olive oil
1/4 cup of chopped pecans
2 spoons of lemon juice
1/2 teaspoon of salt
250g of firm tofu, cut into 1cm cubes
8 cherry tomatoes
1 bunch of American spinach, cut into strips
1 cup of spinach leaves

Blend the spinach with olive oil, lemon juice, water, and salt in a blender
In a bowl, place the tofu and pour the marinade over it
Distribute the pecans and let marinate for about 1 hour
In a salad bowl, arrange the spinach leaves, then top with the tofu mixture and marinade
Cut the cherry tomatoes into quarters and garnish the salad.
