2 to 4 fillets (300 g) of salted herring or 300 g of canned sardines
3 cooked potatoes
2 pickled beets or cooked beets
1 large onion
1 can of cucumber
150 g of cooked ham
2 tablespoons of pickle juice from the cucumber
white pepper to taste
3/4 cup of fresh cream
1 hard-boiled egg
chopped parsley

Leave the fillets in cold water for a day or two
If using sardines, clean them, open them, remove scales and bones, and wash well
Leave to soak in water while preparing the salad, changing the water occasionally
Drain, cut into small pieces
Cut the potatoes, beets, onion, cucumber, ham, and herring into cubes
Mix well
Add pickle juice and a bit of white pepper
Beat the cream and add to the salad
Place in a bowl and garnish with chopped egg white, grated egg yolk, and parsley
If desired, shape the salad in a mold, unmold, and then garnish
Serves 6 to 8 people.
