Cook the rice in water and salt
Drain
Blanch the mushrooms
Dice the cucumber, cut the tomato into wedges and remove the seeds
Season the rice with a tablespoon of vinaigrette, season the vegetables separately with the same dressing and mix with the rice
Combine the onion and sprinkle bell pepper.
