For the salad
2 3/4 cups of rolled oats (500g) soaked for 2 hours
1/2 cup of raisins
1/2 cup of coarsely chopped nuts
12 lettuce leaves
For seasoning
2 cloves of garlic, minced
3 tablespoons of olive oil
1 cup of chopped fresh parsley
1 cup of mayonnaise
1 tablespoon of vinegar
Salt and black pepper to taste
For the salad

Salt and black pepper to taste
Cook the oats in plenty of water for 40 minutes, or until soft
Drain and let cool
Add the raisins and nuts
Chop the lettuce into strips and set aside
Prepare the seasoning: fry the garlic in olive oil until it starts to brown
Add the parsley and mix until wilted
Remove from heat and whisk slowly with a liquidizer, adding mayonnaise and vinegar
Season and add to the oat mixture
Add the lettuce and mix quickly
Pour into 15 servings.
