1/2 kg of sweet potatoes

Wash the sweet potatoes and boil with skin on
Drain and let cool slightly
Wash and drain again
Combine green shallots and bean sprouts in a bowl
Bring vegetable broth to a boil and let simmer
Mix in 2 tablespoons of apple cider vinegar and pour into the bowl
Peel the sweet potatoes and cut into wedges
Add to the bowl and mix
Let sit for 10 minutes
Add turnips, bean sprouts, and green shallots
Prepare a dressing with remaining vinegar, salt, black pepper, and corn oil
Mix with salad
Serve at 8 portions.
