Salt and black pepper to taste

2 tablespoons of apple cider vinegar
3 cups of cooked sweet potato, cut into squares or rounds
1/2 cup of cucumber, peeled and sliced
3/4 cup of mayonnaise
3 tablespoons of chopped onion
1 tablespoon of fresh parsley or 1 teaspoon of dried parsley
1 teaspoon of lemon juice
Salt and black pepper to taste

Mix the olive oil, apple cider vinegar, salt, and black pepper
Add the sweet potatoes and cucumbers to this dressing and refrigerate for 1 to 2 hours
Let it cool to remove excess liquid
Add the remaining ingredients and mix well
Season with salt and black pepper to taste and refrigerate to chill
Serve garnished with chopped parsley.
