6 medium-sized sweet potatoes, washed
1 large onion, chopped
1 cup of cooked beets, diced
1 cup of mayonnaise
salt and pepper to taste
washed and dried lettuce leaves
3 tablespoons of finely chopped bell peppers

Boil the sweet potatoes with their skins in slightly salted boiling water until they're tender, about 25 minutes
Drain well
Peel and slice them while still warm
Place them in a large bowl and combine with the onion, beets, and enough mayonnaise to bind the ingredients
Season with salt and pepper to taste
Let it cool at room temperature for 1 hour or more to allow flavors to meld
Serve on washed and dried lettuce leaves, garnished with bell peppers
