Cut the shrimp into bite-sized pieces, reserving some of the most attractive ones for garnish
Place in a bowl
Add the mayonnaise, capers, and parsley
Season with lemon juice and pepper to taste
Mix gently
Serve in individual portions over lettuce leaves
