1 medium avocado with leaves removed
1 small cucumber, peeled and seeded
1 stalk of celery, cut
125g of seedless grapes
Cooked shrimp (see previous recipe)
1/2 cup mayonnaise
1/2 teaspoon salt
1 tablespoon lemon juice
1/2 teaspoon curry powder
Fresh parsley or dill

Wash the avocado and cut it in half, lengthwise, through the leaves
Remove the pulp from the avocado, leaving the skin intact
Cut the pulp into small cubes
Place them in a bowl
Squeeze out any excess water from the avocado skins
Peel the cucumber and cut it into slices
Cut the slices in half
Add the celery, cucumber, and shrimp to the avocado mixture
Cut the grapes in half (if desired) and add them to the mixture
Cover and refrigerate for a few hours
In a small bowl, mix together the mayonnaise, lemon juice, salt, and curry powder
Mix well
Refrigerate until ready to serve
To serve, combine the avocado mixture with the dressing, mixing well
Place the mixture into the avocado skins and garnish with fresh parsley or dill.
