One-third cup of white raisins
Half teaspoon of salt
Two tablespoons of vinegar
Eight tablespoons of olive oil
One pinch of cinnamon
One pinch of ground cinnamon
Four cups of grated carrots
Two oranges, peeled and cut into slices
One-third cup of toasted almonds, sliced

Soak the raisins in warm water for 30 minutes
Drain and dry
In a small bowl, mix together the salt and vinegar
Add the olive oil slowly, whisking with a fork until the dressing thickens slightly
Add the cinnamon and ground cinnamon
Set aside
Mix the remaining ingredients in a salad bowl and add the raisins
Just before serving, add the reserved dressing and stir well
Serve eight times.
