4 medium carrots, peeled and grated
4 apples, peeled and chopped
200g of nuts
8 small radishes, thinly sliced
2/3 cup of black currant juice without seeds
Dressing
4 tablespoons of lemon juice
4 tablespoons of mustard
4 tablespoons of olive oil
2 cups of natural yogurt
4 tablespoons of honey
Salt to taste

Combine all ingredients in a large salad bowl and set aside
Dressing
In a separate bowl, mix all dressing ingredients until well combined
Add the dressing to the salad and mix gently
Check the seasoning and add more salt if necessary.
