2 pounds of cooked and mashed yucca
4 tablespoons of butter or margarine
1/4 cup of milk
2 slightly beaten eggs
salt to taste
1 cup of chopped green pepper
1/2 cup of grated Parmesan cheese
1/4 cup of chopped olives
1 cup of breadcrumbs
oil for frying

Place the mashed yucca in a bowl, add the butter or margarine, milk, eggs, and salt
Mix well
Add the green pepper, Parmesan cheese, olives, and breadcrumbs
Mix everything together very well
Shape into croquettes
Fry in hot oil until golden brown
Serve 4 to 6 per serving.
