The night before, clean the smoked meat, removing any excess fat and skin, leave it in a refrigerator covered with water
On the next day, drain and reserve
Place the smoked meat in a pressure cooker and cover with water, close the cooker and let it simmer
When the pressure starts, reduce the heat and cook for 45 minutes from the start of the simmer
Remove from the heat, let it cool and shred the meat
In a salad bowl, combine the onions, tomatoes, green onion, olive oil and vinegar
Add the shredded meat and mix well
