Dressing
1/4 cup water
1/4 cup vinegar
1 tablespoon honey
1 tablespoon soy sauce
1 tablespoon grated fresh ginger
Salt to taste
Spinach
4 small balls of yogurt sorbet
1 mango, peeled and cut into thin slices and irregular pieces
1 handfull of arugula
1 handfull of small American lettuce leaves
Dressing
1/4 cup water
1/4 cup vinegar

1 tablespoon soy sauce
1 tablespoon grated fresh ginger
Salt to taste
Spinach
4 small balls of yogurt sorbet
1 mango, peeled and cut into thin slices and irregular pieces
1 handfull of arugula
1 handfull of small American lettuce leaves
Dressing
Combine all ingredients
Spinach
Wash the arugula and lettuce, and arrange them in four shallow dishes
Top each dish with slices of mango
When serving, drizzle a little dressing over each dish, place one ball of sorbet on top, and drizzle with the remaining dressing.
