8 handfuls (about) of mixed green leaves (arugula, radicchio, lettuce)
8 firm pears
1/2 cup (about) of butter
2/3 cup (about) of grated Parmesan cheese
400g of goat cheese
1/2 cup (about) of olive oil
2 tablespoons of vinegar
Salt and black pepper to taste

Peel the pears and cut them into eight pieces
Melt the butter and drizzle it over the pears slowly
Return all parts to a skillet and sprinkle with Parmesan cheese
Cook until the cheese melts and wraps around the fruit. Reserve
Rinse the greens well in cold water and dry with paper towels
Place in a salad bowl and arrange the caramelized pears
Sprinkle shredded goat cheese and reserve
Mix salt and black pepper into vinegar and whisk in olive oil, without stopping, using a fork or eggbeater
Dress the salad, garnish with scallions, and serve immediately.
