4 boneless, cooked chicken breast quarters
2 cups of chopped parsley leaves (without stems)
1 cup of chopped hazelnuts or almonds
1/2 cup of white grapes without seeds
1 cup of orange zest
Creamy Orange Dressing (recipe below)
Lettuce leaves

Combine 2 tablespoons of orange juice
1/4 cup of mayonnaise, grated rind of 1 orange
1/4 teaspoon of hot pepper sauce and 1 cup of whipped heavy cream
Mix well. Serve within 4 to 6 hours.

Add the Creamy Orange Dressing and mix very well
Serve over lettuce leaves as an appetizer
Alternatively, serve in the orange shell itself
