Grease a soufflé dish
In a pan, melt the butter or margarine
Add the flour and mix well
Gradually add the milk and cook, stirring constantly until thickened
Add the cheese and cook, stirring until melted
Beat the egg yolks slightly and season with salt and pepper
Add to the cheese mixture
Remove from heat
Add the cooked rice
Finally, add the beaten egg whites
Place in the prepared soufflé dish
Bake in a moderate oven for 40 minutes
Serve immediately with the shrimp sauce made as follows: melt the butter or margarine
