6 tablespoons of butter or margarine
1 1/2 cups of green scallions
3 crushed garlic cloves
1 tablespoon of ground cinnamon
1 tablespoon of dried oregano
To taste, ground black pepper
3 cups of rice
4 1/2 cups of beef broth
3 tablespoons of grated orange zest
3 cups of toasted and chopped cashews
6 tablespoons of butter or margarine

In a large saucepan, melt the butter or margarine, fry the scallions and garlic until they're soft
Add the cinnamon, oregano, and black pepper
Mix well
Fry the rice for a few minutes
Add the beef broth and orange zest
Bring to a simmer
Cover and maintain low heat until the rice is cooked
If it becomes too dry, add more broth
Place half of the toasted cashews
Serve in a platter dusted with the remaining cashews.
