In a pot, cook the chicken breast with 5 cm of water and the ginger until it's tender
Cook the macaroni according to package instructions
Drain and set aside
When the chicken is cooked, remove it from the pot and let it cool slightly
Reserve the broth and prepare the tuna sauce by combining all ingredients in a blender and blending well
Remove the meat from the chicken breast, discard the skin, and cut the meat into pieces
In a large bowl, mix together the chicken, macaroni, tuna sauce, and mayonnaise
Refrigerate until chilled
To serve, place lettuce leaves on a plate, arrange the salad, and garnish with orange slices, olives, and zucchini
Serve 4 portions.
