For the gelatin
1/2 cup water
2 envelopes of unflavored white gelatin (24g)
2 cups milk
4 tablespoons cornstarch
1/2 tablespoon almond extract
For the fruit salad
1 medium green apple, diced
1 ripe papaya, diced
2 oranges, peeled and segmented
1 small pineapple, cut into chunks
1/3 cup cornstarch
4 tablespoons freshly squeezed lime juice
For the gelatin
1/2 cup water

Combine water and gelatin in a saucepan to hydrate
Heat over low heat and stir until dissolved
Add milk, cornstarch, and almond extract; mix well
Pour into a large bowl, allowing the gelatin to reach 1 cm in height
Refrigerate until set
In a large salad bowl, combine fruits with cornstarch and lime juice
Refrigerate for 30 minutes
At serving time, cut the gelatin into small cubes and mix with the fruit salad
Serve immediately
