Wash the fruit, peel it, and cut the pulp into cubes
The oranges should be sliced into wedges and the grapes halved
Place all the fruit in a large bowl
Sprinkle with sugar and drizzle with liqueur
Refrigerate
Beat the egg whites with granulated sugar until frothy
Gradually add hot milk, beating continuously
When it starts to thicken, remove from heat, add vanilla bean, and let cool in a glass bowl
Place it afterwards in ice cube trays without divisions and let it freeze for two hours, stirring every 30 minutes with a wooden spoon
Arrange this foam over the fruit, in a regular layer
Cover everything with whipped cream
Place the bowl in a larger container filled with crushed ice and serve immediately
Serve in glasses.
