4 cups of cooked and diced chicken
1 cup of chopped salted butter
1/3 cup of mayonnaise
2 tablespoons of lemon juice
2 tablespoons of finely chopped onion
1 tablespoon of salt
1 head of lettuce
1 1/2 cups of honey balls or cantaloupe
1/4 cup of toasted and chopped pecans
4 cups of cooked and diced chicken

Mix well the chicken, butter, mayonnaise, lemon juice, onion, and salt in a medium bowl
Cover
Refrigerate for at least 1 hour
When serving, chop the lettuce into small pieces and place it at the bottom of a large salad bowl
Place the chicken salad on top
Add honey balls or cantaloupe in the middle and sprinkle with toasted pecans
Serve 6 portions.
