Clean and wash the chicken
Place it in a pot with the onion, parsley, carrots, cilantro, and salt, then add enough water to cover it
Bring the mixture to a boil, then reduce the heat and simmer for 55 minutes or until the chicken is tender
Remove from heat and let cool in the broth
Remove the chicken from the broth, peel off the skin, and debone
Cut the meat into cubes and place in a large bowl
Add all remaining ingredients and mix well
Serve on lettuce leaves or as a sandwich filling
Serve 4 portions.
