Combine the potatoes, beetroots, parsley, and walnuts in a bowl
Mix together the olive oil with the vinegar, orange juice, lemon juice, salt, and black pepper
Add the garlic and mix well with a fork
Pour over the salad
Mix carefully
Check the seasoning
Serve on lettuce leaves
