6 medium-sized green papayas (1.2 kg), with skin, cut into thin slices

For the dressing
1 cup of fresh whipped cream (240 ml)
2 tablespoons of prepared mustard
1 tablespoon of salt
1 tablespoon of ground cinnamon
10 ounces of sliced black olives (800 g)
1 cup of white raisins (170 g)
2 cups of chopped fresh parsley (90 g)

Prepare the dressing: in a blender, blend the whipped cream until it becomes firm peaks
Add the remaining ingredients and mix well
Drain the green papaya and add the lime juice to the dressing
Mix well and set aside
In a salad bowl, mix the black olives with white raisins
Top with the green papaya and cover with parsley leaves
Serve with the dressing on the side
