400 g of ripe green papaya
2 tablespoons of olive oil
1 small, finely chopped garlic clove
1 pimenta-dedo-de-moรงa pepper without seeds in slices
2 tablespoons of fish sauce (nampla)
1 tablespoon of brown sugar
1/4 cup of finely chopped green onion
1/2 cup of toasted almonds
Salt to taste

Peel the papaya and cut it into thin strips (use a vegetable slicer with a flat blade for ribbons)
Place in a bowl

Soak the olive oil and mix with garlic until soft, then add to the papaya
Remove from heat and add to the papaya
Add all other ingredients except almonds, stir well, and let it rest for at least an hour
When serving, add toasted almonds.
