Line a salad bowl with the lettuce leaves and reserve
In a large bowl, combine the remaining ingredients and mix gently. Reserve
Prepare the dressing: in a medium bowl, using an electric mixer or whisk, mix all the ingredients together
Add the dressing to the ingredients in the large bowl, mixing gently
Distribute over the lettuce leaves in the reserved salad bowl
Garnish with toasted almonds and serve
