Season the shrimp with salt, chives, pepper, and soy sauce, and cut them in half, reserving one for decorating the plate
Sauté the onion in a pan and cook it
Don't let it brown, just cook it
Add the shrimp, frying them for only 1 minute
Remove them from the heat and reserve them
Cut one of the mango slices into thin strips for garnishing; the other, into cubes to be mixed with the shrimp
Assemble the plate in the following way:
Cover the plate with the rouge (in a fan shape)
In the center, place a form (round and bottomless)
Around the form, decorate with some mango strips; inside it, place the mixture of shrimp with mango
Around the plate (above the rouge), make another fan shape with the remaining mango slices, leaving the rouge visible
Decorate the shrimp with mango that remains in the center of the plate with 2 frills of rouge and a semicorted shrimp in the middle, so that it looks like it's in a shell
