2 cups of cucumber diced into small pieces, drained well

1 teaspoon of salt
100g of whole cheese

Soak the gelatin in the cold water and dissolve it in the boiling water
Chill in the refrigerator until slightly thickened
Combine the cucumber, lemon juice, vinegar, and salt
Line a 1-liter mold with a thin layer of gelatin
Cut the cheese (use your preferred type) into small cubes
Arrange on top of the gelatine
Chill in the refrigerator until firm
Cover with remaining gelatin mixture, place in the refrigerator to chill and set
Unmold over lettuce leaves and garnish with cucumber slices
Serve with mayonnaise
