For the salad
4 cups cooked pineapple (800g)
1 cup chopped green scallions
1 large red onion, cut into small cubes
3 cups arugula leaves (crushed in a cup)
For the dressing
2 tablespoons freshly squeezed lime juice
1 tablespoon mustard
1 tablespoon honey
1/4 cup olive oil
Salt and black pepper to taste

Cut the pineapple into wedges and place it in a salad bowl with the remaining salad ingredients
Top with the dressing (prepared by mixing all the ingredients together)
Mix gently and serve
