For the salad
2 cups of wheat for quibe, 300g (leave it to soak for 2 hours)
1 cup of red cabbage shredded
1 cup of grated carrot
1/2 cup of red bell pepper cut into cubes
1/2 cup of chopped onion
1/2 cup of chopped parsley
For the seasoning
1/2 cup of olive oil
1 tablespoon of sesame seeds
1 clove of garlic pressed
2 tablespoons of vinegar
1 tablespoon of lemon juice
2 tablespoons of soy sauce
Salt and black pepper to taste

Drain the wheat and squeeze well, removing excess water
Place it in a salad bowl with the remaining salad ingredients
Prepare the seasoning: heat a small pan over medium heat with olive oil, sesame seeds, and garlic
Stir for 2 minutes until golden brown
Remove from heat and let cool
Add the remaining seasoning ingredients and whisk quickly with a fork
Combine with the salad and mix well
Serve in 8 portions.
