2 oranges or grapefruits
2 kiwis, peeled and cut into thin slices
2 tablespoons of lemon juice
1 large carrot, coarsely grated
1 cucumber, cut into thin slices
For the dressing
1/4 cup mayonnaise
1/4 cup natural yogurt
2 green scallions, chopped
1 tablespoon chopped fresh parsley, chopped
Salt to taste

Cut the oranges in half, remove the pulp and reserve it, forming four tarts with the orange shells
Mix the kiwi with lemon juice
Fill the orange tarts with their pulp, some kiwi, carrot, and cucumber (reserve a little of each ingredient for decoration)
Decorate with kiwi slices, cucumber slices, and a tuft of grated carrot in the center
Mix all dressing ingredients and spoon over the oranges
