3 cups tomato juice
1 sprig of salt
A small chopped onion
2 lime wedges
A small bay leaf
1 tablespoon salt
A pinch of pepper
2 tablespoons unsalted gelatin
2/3 cup cold tomato juice
1/4 cup vinegar
1 1/2 cups mixed greens, chopped (raw or cooked)

3 cups tomato juice

Mix the 3 cups of tomato juice with salt, onion, lime wedges, bay leaf, and pepper
Allow to simmer slowly uncovered for 10 minutes; then strain
While this is happening, sprinkle the gelatin over the cold tomato juice mixed with vinegar
Let it rest for a few minutes
Add the warm tomato juice mixture and stir until dissolved
Chill in the refrigerator until slightly thickened
Gently fold in the chopped greens and portion into 7 individual servings
Chill again in the refrigerator until firm, then unmold onto lettuce leaves
Serve with mayonnaise if desired
