The night before, soak the oysters in abundant water
On cooking day, thoroughly rinse the oysters
During cooking, remove all the foam that rises to the surface with a slotted spoon until the oysters are tender
Drain and reserve the oyster liquor and solids separately
In another part, combine lemon juice, garlic, onion, olive oil, and salt (cold) with the still-warm cooked oysters and their liquid
Add a little of the cooking water
Mix everything and sprinkle with chopped parsley
Serve the dish warm or chilled
Accompany with onions, radishes, or pickles.
