1 zucchini

2 cups (about 1/4 cup) of chopped green beans
1/2 head of lettuce
1/2 cup olive oil
1 tablespoon vinegar
Chopped fresh herbs to taste (oregano, thyme, chives)
Salt and black pepper to taste

Peel the zucchini, potatoes, and carrots and cut them into cubes
Set aside
Cut the carrots into diagonal strips
Cook the zucchini, potato, carrot, and green beans separately in salted water until they are tender but still firm
Drain and place in a bowl
Season with salt and pepper and set aside
Dressing: whisk together olive oil and vinegar without stopping
Add chopped herbs and a pinch of salt
Whisk well and set aside
Line a salad bowl with lettuce leaves
Spread the cooked vegetables and drizzle with dressing
Serve immediately.
