For the dressing, combine
1/3 cup of vinegar
1/4 cup of mustard
1 tablespoon of salt
1/4 cup of honey
1 cup of oil
2 large heads of romaine (500g)
1 large bunch of American arugula
1 handful of radicchio

In a small bowl, whisk together the vinegar, mustard, salt, and honey
Add the oil in a thin stream, whisking with a fork until thickened
Refrigerate
Peel the romaine, place it in a small bowl and refrigerate
Chop the arugula and radicchio leaves by hand
Transfer them to a large serving dish and spread the romaine on top
Drizzle with dressing just before serving.
