Well scrape and grate the cantaloupe rind (with the white part) to complete five cups and bring to a boil with water and salt for a rapid simmer
Then cool and reserve
Peeled and reserved
In another pan, cook two chicken breasts, shred, and set aside
Combine the melon, chicken, two stalks of celery, 1/2 cup of mayonnaise, and season with salt, onion, parsley, and lime
Serve cold.
