Process the cheddar cheese with the butter until a smooth paste forms. Reserve

Grind the sausage to form a smooth paste. Reserve

Spread a small amount of mayonnaise on a slice of bread and add a bit of the cheese mixture

Place another slice of bread on top and spread a little more mayonnaise

Add some of the sausage mixture, smoothing it out with a knife

Spread a layer of mayonnaise on another slice of bread and place it on top of the sausage filling

Gently press down and cut the sandwich in half

Repeat the process with the remaining ingredients

Cover with a damp cloth until ready to assemble and serve.
