1 kg of peeled and deveined shrimp, 1/3 cup of olive oil, 1/3 cup of lemon juice, 3 large garlic cloves minced, 1 tablespoon of salt, to taste, 1 cup of chopped green onion, 1 can of artichoke hearts, 8 pimenta peppers

Rinse the shrimp under cold water
Drain
In a medium bowl, mix together olive oil, lemon juice, garlic, salt, and pepper
Mix well
Add the shrimp
Mix and refrigerate for one hour
Pour the liquid from the shrimp into a skillet
Add the shrimp and fry for 5 minutes
Chop the green onions into small pieces
Add to the shrimp along with the artichoke hearts
Cook for 1 or 2 minutes
Cut off the tops of the pimenta peppers and remove the seeds
Stuff with the shrimp mixture.
