1 cup of finely chopped onion (2 medium)
1 tablespoon of fat
1/2 pound of ground pork
1 tablespoon of wheat flour
1 cup of milk
1 teaspoon of salt
1 pinch of pepper
2 tablespoons of chopped parsley
3 egg whites
1 cup of buttermilk
2/3 cup of wheat flour
1/2 teaspoon of salt
3/4 cup of grated cheddar cheese

Sauté the onion in fat, add the pork and flour
Cook until the pork is tender
Add the milk, salt, and pepper
Let it simmer for 15 minutes, or until thickened
Add the parsley, mix well, and set aside
Combine the egg yolks with buttermilk in a large bowl and beat well
Add the flour and salt
Fold in the whipped egg whites
Pour half of the mixture into a greased tart pan
Top with grated cheese and bake at 375°F for 10 minutes
Remove from oven and top with pork
Pour the remaining egg mixture over the pork
Bake for an additional 10 minutes
Sprinkle with more grated cheese
Serve warm with buttermilk.
