250 g of cod (left to soak for 48 hours in the refrigerator, changing the water several times a day)
1 small onion, finely chopped
1/4 cup (60 ml) of olive oil
2 tablespoons of chopped parsley
2 tablespoons of chopped black olives
1 baguette cut into four pieces or 4 French-style bread rolls
250 g of cod (left to soak for 48 hours in the refrigerator, changing the water several times a day)

Remove the skin and bones from the cod and flake it
Place it in a pan with the onion, olive oil, and parsley
Bring to a simmer and cook for 10 minutes, stirring occasionally
Remove from heat and add the olives
Assemble the cod cakes by filling each baguette piece with the cod mixture
