Spread the peanut butter over each slice of bread
In a non-stick skillet, combine the sugar, water, and lemon juice
Stir well and let simmer on low heat without stirring until it reaches a syrupy consistency
Add the sliced bananas and let them caramelize
Place half a banana on top of each bread slice and drizzle with the syrup that formed in the skillet
Decorate with fresh mint leaves and serve immediately.
