    To assemble, combine a raw egg yolk with lean beef and season to taste. Butter or margarine thinly sliced and cut into squares. Cut each square in half and top with a thick layer of ground beef (process through a meat grinder twice). Just before serving, wash and crack an eggshell for each sandwich. Remove the white leaving only the yolk in one half of the shell and place the shell over the beef (use the white for other purposes). Garnish each sandwich with finely chopped green onion. Season with salt, pepper, some English Worcestershire sauce and hot pepper sauce if desired. Calculate 250g of ground beef for 4 sandwiches. The beef can be ground 4 hours in advance and stored covered in the refrigerator until the time to prepare the sandwiches. The sandwiches can be prepared just half an hour before serving.
