To assemble, combine a raw egg yolk with lean beef and season to taste. Butter or margarine thinly sliced and cut into squares. The beef can be ground 4 hours in advance and stored covered in the refrigerator until the time to prepare the sandwiches. The sandwiches can be prepared just half an hour before serving.
