In a large pot, bring the water to a boil over high heat
Add the peppers and simmer until the skin starts to loosen
Drain them under cold running water
Then, cut them in half, remove the seeds and peel
Cut into pieces
In a medium pot, cook the pepper in 4 tablespoons of olive oil over high heat, stirring occasionally, until soft
Let it cool
Add the anchovy fillets and mix well
Blend in a food processor until a paste forms
Add the remaining olive oil, dried oregano, ground cayenne pepper, and mix well
Serve at room temperature.
