Season the sardines with salt and black pepper and brush with olive oil
A heat a grill pan over medium-high heat and cook each sardine for 2-3 minutes on each side
In a saucepan, warm the olive oil and add the remaining ingredients
Cook, stirring occasionally, until the ingredients are tender but still crisp
Arrange in a serving dish and cover with the sardines
Serve with mixed greens salad
