In a medium bowl, whisk together the eggs, grated lemon zest, and sugar until smooth (2 minutes)
Above a pot of simmering water, slowly add the wines while whisking continuously until thickened (7 minutes)
Cover with plastic wrap in direct contact with the surface to prevent skin from forming
Let it cool for about 10 minutes
Transfer to four small serving cups and let it chill
Cover with plastic wrap and refrigerate for at least 1 hour before serving
