1 tablespoon of orange zest
1/4 cup of orange juice
1 cup of whipped cream, sweetened with confectioner's sugar
1/2 cup of shredded coconut
1/2 cup of diced oranges
8 champagne or diplomat cookies (or more)

Combine the sugar, salt, orange zest, and orange juice
Refrigerate until the mixture starts to thicken
Add the whipped cream, shredded coconut, and diced oranges to the gelatin
Mix well
Line a 1-liter mold with champagne cookies
Add the gelatin mixture and refrigerate until it firms up
Unmold
