Soak the gelatin in cold water for about 5 minutes
Mix the egg yolks and lemon juice over low heat, whisking constantly
Whisk until the mixture is pale and creamy
Gradually add the sugar, whisking continuously
Add the gelatin mixture, whisking until well combined
Continue whisking over boiling water until the mixture thickens
Let it cool
Beat the egg whites with a pinch of salt until stiff peaks form
Gradually add the sugar, beating until stiff and glossy
Mix in the previous mixture
Pour into a flat dish or individual cups
Serves 4 to 6 portions
