Bring the water to a boil with the butter
When it starts to simmer, add the wheat flour, stir quickly with a wooden spoon and continue cooking over low heat, stirring constantly until it forms a thick paste at the bottom of the pan
Remove from heat, let cool and gradually add 2 or 3 eggs
Beat well until the composition is smooth and homogeneous
Use a piping bag to form mounds and fry them in hot oil one by one
Cover with gelatin and serve immediately.
