Measure the flour and sift it
Scald the milk, then let it cool a bit
Dissolve the baking powder in warm water
Combine 1/2 cup of milk, 1/2 teaspoon of confectioner's sugar, and 1 1/2 cups of flour
Mix well, cover, and let it rest in a protected place until bubbles form on the surface
Beat the egg yolks in a bain-marie with confectioner's sugar and salt until they turn pale
Add the softened butter, rum, and grated lemon rind to the mixture
Combine the baking powder mixture with the remaining warm milk
Add the remaining flour
Mix well and cover
Let it rest for 1 hour
Knead the dough into a ball and add a little more flour if it's too sticky
Roll out the dough on a floured surface to about 1 cm thick
Use two round cutters, one larger than the other
With the larger cutter, just mark the dough
With the smaller cutter, cut out circles
Place 1 tablespoon of rosewater gelato in the center of each large circle and top with smaller circles
Press the edges together and trim with the small cutter
Place the 'dreams' on a heated cloth lightly floured
Cover with another cloth and let it rest for another hour
Heat plenty of oil
Fry the 'dreams' in the hot oil until they're golden brown, turning them over halfway through
Drain excess oil
Dust with confectioner's sugar or common sugar
Make about 30 'dreams', depending on their size.
